Never Trust a Skinny Chef

I was once told to never trust a skinny chef. And I should know, my food is awesome and I've got some tasty love handles! After we got married I named one of them La Puente, after the most amazing restaurant that put it there to begin with!

Seriously though . . . I have issues trusting people who claim to cook amazing food, but they don't really show it.
I don't trust them as far as I could throw them. And I'm a big girl. I can throw some people.

People like this however . . .
I trust with my whole heart, soul and stomach! People that have some meat on their bones and still look pretty! People that aren't afraid to use butter and heavy cream, or extra cheese! People that cook vegetables in bacon fat and know that the only way to make decent pastry is to use lard and shortening!

Of course not all the skinny ones are horrible . . .
Some are just really nice to look at.

And one (who is also nice to look at) is going to soon be joining the ranks of chefs in the world.

After much contemplation and a bit of prayer, Matt's decided that he wants to go to culinary school to become a chef. It's a high demand job with long hours, physical work and plenty of schooling, but it's his dream. I'm along for the ride, enjoying the taste tests as they come.

Also along for the ride will be a new blog run by the both of us. Since he'll be cooking more it didn't seem fair to post all his awesome recipes on my own blog, and I figured it would be nice for him to have something to keep his head in the game.

Plus, who says no to food porn? Honestly?

I'm in the middle of setting up the blog this week while Matt's in the kitchen cooking up a storm . . . and yes, he will be using butter.

  2. Friends who have stood by and supported us with making plans for our new future.
  3. Brown sugar glazed carrots.
  4. Panko crusted chicken breasts.

This is awesome! I love watching cooking shows. Top Chef is my favorite.

Oh, and I used to hate Bobby Flay. I thought he was an arrogant jerk. Until I started watching Throwdown. And now I love him.

I hate to say this, because I do enjoy reading your blog...

But, as funny as this post is, it's a genuinely unhealthy view to have, that bacon fat, lard, butter or cheese could EVER be a good thing.

And, I really hope you don't take this offensively because I'm genuinely trying to be helpful and offer sound advice, but given your recent unfortunate luck with your fertility, eliminating such foods that literally attack your bodily systems could (and likely would) help you greatly. Being overweight is not a badge of honor, but a great encumbrance that will eventually affect your health negatively, especially if it's self-inflicted and not genetic.

I always cringe when I watch Paula Deen, personally, because, I hate to say it, but if she eats like that everyday I can only imagine the maladies she and her husband will face, or have already.

Again, I do not mean this to be offensive, it just breaks my heart to watch women go though the ordeal of fertility problems when they could be doing much to help themselves.

Kristina - That show is one of the reasons I don't like him. Cause the people he throws down against are supposed to be the best in their field and I heard that a few he won against lost business because they obviously weren't the best anymore.

Plus I would totally freak if the Food Network was all, "Hey you get your own special!" and then instead Bobby Flay shows up to show how much better he is than me. Grr.

Now if they have Tyler Florence do it I might reconsider. He's just so . . . pretty.

JBirch - I hate to say this, but I love my blog too. I'm not saying that you eat until you burst or lather everything in bacon fat and such. But things do just taste better. Grandparents before us used the same ingredients and mine had 8 kids of her own. It's all about balance. Paula Deen looks good. She's not obese. She looks healthy and happy.

There's a difference between a normal chef, a skinny chef and Mario Batali.

My overweight never stemmed from eating fats like that. I know cause when I cook meals everyday, I actually lose weight. My weight gain comes from a jacked up metabolism because I don't eat enough and what I do eat when I'm not eating enough is processed junk. I've been known to go days with eating Top Ramen for lunch and nothing else for the whole day.

But when I went on a Cruise and ate once an hour I lost weight because I was keeping my metabolism up and I was walking constantly.

Everything is about balance and moderation.

Heck, I don't use as much butter as Paula Deen, but I do use it.
